But as I promised, here is the CAULIFLOWER QUICHE recipe. Aw c'mon... give it a try!

Cauliflower Quiche (oven 375 degrees)
1 head Cauliflower Florets, thinly sliced
1/3 c. Onion, finely chopped
1/2 c. Green or Red Pepper, finely chopped
1/2 c. Tomatoes, chopped (more or less to taste)
1 c. Cheddar cheese, grated
1 c. Milk - 1/2 c. Bisquik - 3 Eggs - 1/2 tsp. Salt - 1/8 tsp. Pepper
Place cauliflower in covered pan with enough salted boiling water to cover. Cook with lid on for 10 minutes. Drain, place in greased 9x13 glass casserole dish. Sprinkle with onion, peppers, tomatoes and cheese.
Place milk, eggs, Bisquik, salt and pepper in a blender, cover and whirl for 15 seconds.
Pour over cauliflower mixture.
Bake in preheated 375 degree oven for 20-25 minutes until knife inserted in center comes out clean and top is golden.
